			<content:encoded><![CDATA[ <p>Refritos (well cooked beans) is one of those essential sides that makes life so much easier. The ingredients are cheap and nutritious. Refritos freeze well, and defrost nicely in the microwave so it just makes sense to make an extra large batch every so often to portion up and freeze for several meals. When I&#8217;m feeling really ambitious I make an extra thick batch and roll up my own burritos.</p>
<p>I found this <a title="refried bean recipe" href="http://simplyrecipes.com/recipes/refried_beans/">recipe for refritos</a> a while back and it quickly became the preferred version in our household. If you happen to have a few too-limp-for-salad-but-not-dead sweet or bell peppers hiding in the fridge they do go well (braised and roughly diced) right in the beans.</p>
